Luna the Cat + Scrambled Egg White Mess

When I first saw the Luna Bar that the wonderful Kayla sent to me, I immediately thought about a different Luna.

Sailor Moon!

Did anyone else watch Sailor Moon back in the day? Let’s just say that I was obsessed with this show. I had the dolls, the comics, the magazine…I had Sailor Moon fever!

Now, back to the Luna Bar. The flavor I tried was Nutz Over Chocolate and it was really impressive. It was a filling snack, and anytime I try a bar that has some chocolate in it, I’m pretty much sold. Here are some of the other great things about this bar:

  • High in calcium and folic acid
  • Rich in antioxidants A, C, E
  • 9g protein, 3g fiber

So glad I tried it! I’m going to be on the lookout for more Luna Bars!

Also, just a random little thing. I’ve gotten a couple questions about the honey vinegar dressing I use on my salads. Here it is:

Here are the details, according to Worlds Foods:

This Alessi Orange Blossom Honey Balsamic Vinegar from Modena, Italy is a light and crisp vinegar just as its name implies. Made with Italian white wine vinegar and the musts of white grapes, it has a hint of sweetness from the orange blossom honey.  This refreshing, versatile vinegar can be used in salads, chicken, fish, or even sprinkled over summer berries.

This is my all-time favorite salad dressing!

Munchies

Yesterday’s lunch was a garbage bowl unlike no other.

Packed with veggies and protein!

Here’s what we have in the mix: black beans, cherry tomatoes, zucchini, red bell pepper, hearts of palm, Lundberg Wild Blend Rice, feta cheese and balsamic vinegar. I haven’t had hearts of palm for a while, and they added some nice saltiness to the dish.

My breakfast today was an egg white bowl with some vegetable favorites.

Scrambled Egg White Mess

Ingredients:

  • no-stick cooking spray
  • olive oil
  • 1/4 C. liquid egg whites
  • 2 Tbs. non-fat milk
  • 1 handful spinach
  • 2 Tbs. sun-dried tomatoes
  • 1/4 C. chopped red bell pepper
  • salt to taste
  • pepper to taste
  • 2 Tbs. mozzarella cheese

Directions:

Spray a small frying pan with no-stick cooking spray. Add olive oil and heat on medium.  Saute spinach, sun-dried tomatoes and pepper. In a separate bowl whisk egg whites with milk and cheese. Stir egg white mixture into sauteed vegetables in frying pan, scrambled until desired consistency. Add salt and pepper to taste. Serves 1.

I’m not sure why I titled this dish as a mess. It really wasn’t messy, but I just kind of threw together anything and everything to make it. That’s where the “mess” comes in.

Well, today is my last official day of staycation. I do have the weekend, but for the most part, my break is over. Hopefully, I didn’t mess up my sleep schedule too much. Overall, I got a ton of stuff done. I hung out with friends, worked out, got my hair cut and my eyebrows done and lots more. Staycation = success!

    Lunabars are great! I love that they’re a bigger bar than others without too many cals – great for a snack. My favorites are toasted nuts n’ cranberry & the peppermint chocolate one.

  5. Ohh i have never thought of putting sundried tomatoes in my eggs! that sounds like a delicious Mediterranean breakfast! That dressing also sounds amazing! I wonder if we could make our own version!

    Seriously can we live the same life? I was OBSESSED with Sailor Moon. Like I would watch the cartoons religiously and draw pictures and I drew my own sailor scouts. BAHAHA. But no really-I got so excited that someone else understands.

  8. I’m not a big fan of luna bars—they’re ok, but not my fave. I have a problem only eating one of things like that, so I just try and stay away from them!

    My fave salad dressing is a balsamic vinaigrette!

    No big plans here this weekend—doing work, trying to relax, working out…probably eating a lot!

    ive only ever had a luna once! since they dont seel them here.. but i wasnt a huge fan! im sick of those soy crispy tastes!! YES my fav salad dressing is my vegan ranch that i make!

  11. I LOVE Luna bars! I have to watch myself because they’re actually kinda high in calories, but they’re 100% fruit & nut, so at least it’s not full of preservatives or other “icky” fillers!

  12. I love Luna bars, but I’m a Larabar junkie, so I usually just stick to those 🙂 My weekend is pretty fun filled – but relaxing at the same time! Have a great weekend!

  15. My favorite dressing is my homemade maple balsamic vinaigrette, although I’m glad you posted your dressing because I was curious. I’ve definitely never seen it before.

    I’m not a huge fan of Luna bars, but I did just pick up a crap ton of Lara Bars from WFs, and I’m so excited to finally try them!
