Combining Cedar’s Salads to Make My Own!

Angie went to Whole Foods today, and picked up two very interesting Mediterranean salads made by Cedar’s. First up is Cedar’s Chickpea Salad, which contains chickpeas, edamame, mixed green/red peppers, carrots, dried cranberries, sunflower & extra virgin olive oil, vinegar, granulated garlic, salt, Italian spices, black pepper, cumin.

On its own, the salad is alright. Nothing that I’d write home about. But it is healthy. Being packed with protein and rich in fiber, it’s a great salad to bring to work for lunch.

The second salad, Angie bought was Cedar’s Lentil Mediterranean Salad, which contains lentils, fresh tomatoes, parsley, bulgur, carrots, red onion, lemon juice, sunflower oil, olive oil, vinegar, salt and spices. This one was a lot tastier on its own!

But, I couldn’t choose between the two for lunch. Instead, I combined them, and also added chopped up cherry tomatoes, green olives (yum!) and chopped up sun-dried tomatoes (also one of my favorites). Here it is:

I also had a small yellow pepper that begged to be cut, and some fat grapes!
