I wanted to try something a little different for today’s lunch. I like to include a salad, but since these yummy corn tortillas have been sitting in the fridge for a while, it was only fair to let one of them get in on the fun, too!
I love red peppers, but instead of adding them onto this little creation, I used roasted red pepper hummus instead.
All I did was chop up the cucumber and tomatoes, then I spread the hummus over the tortilla and topped it with the veggies and a little bit of feta.
Looks delicious! But I still have so much spinach in the fridge, that I used it up too in a salad.
- Spinach leaves
- Green olives
- Cherry tomatoes
- Balsamic vinegar
Here’s everything all together. I had to include some fruit!
